If you are tired of turkey sandwiches and don’t know what to do with all of those holiday leftovers, try this easy and delicious recipe, designed to please the palate while helping clean out the fridge.

1 sheet frozen puff pastry, thawed
2 cups finely chopped cooked turkey
1/3 cup cream cheese, room temperature
1 teaspoon fresh thyme, chopped
2/3 cup whole-berry cranberry sauce
1 cup arugula

Preparation:

Preheat oven to 375 degrees. Gently unfold and press the puff pastry sheet into a square. Bake on buttered sheet pan for 20 minutes until the pastry is lightly browned. While still warm, spread the cream cheese on the puff pastry leaving an inch around the edge. Next, sprinkle with thyme, top with turkey, and drizzle cranberry sauce on top.

Bake for another 8-10 minutes until browned and heated through. The edges of the pastry will puff up around the filling. Top with arugula, cut into squares and serve.
