From the Kitchen: Smoked Turkey Wraps

Smoked turkey and all the fixings, wrapped up in a tortilla. Yum!

For a simple summer meal, try a smoked turkey wrap.
8 large flour tortillas
8 slices smoked deli turkey
1/2 cup cheddar cheese
1/2 cup monterey jack cheese
2 teaspoons butter
2 tablespoons chopped cilantro or basil

Spread butter on one side of each tortilla. Place tortillas greased side down on griddle (or one at a time in a pan). Cover tortillas with cheese, sliced turkey, and cilantro or basil. Fold tortilla in half, and cook for four to five minutes. Once the cheese has melted, let each wrap cool on a paper towel, and cut into triangles. Serve with garden greens and salsa.

Serves 4-6.
Homemade tortillas:
If you’d like to take this recipe a step further and make your own tortillas, you’ll need 1.5 cups flour, 1 teaspoon baking powder, 1/2 teaspoon salt, 2 tablespoons vegetable oil, and about a half cup of warm water.

Mix the flour, baking powder, salt, and vegetable oil in a large bowl. Add the water and mix the dough until it forms a mass. Roll the dough into 8 balls and flatten them into a circle. Place the raw tortillas on a hot skillet and cook for thirty seconds on each side. Enjoy your fresh tortillas!
