From the Kitchen: Sunday Brunch Casserole

A breakfast casserole, genrerously topped with thick strips of bacon and garnished with parsley.

Bacon-topped Sunday Brunch Casserole.

A versatile dish that is appropriate for both an elegant brunch as well as a relaxing evening dinner. This creamy, deliciously, cheesy casserole is sure to excite your taste buds! For all those veggie lovers, you can easily modify this recipe, omitting the bacon to make it vegetarian friendly.

1 ½ lb.    Bacon
½  cup    Onion
½  cup    Red Pepper
12           Eggs
1    cup   Milk
1  16oz.  Frozen Hashbrowns
1    cup   Shredded Cheese
1       t.    Salt
½      t.    Pepper
¼      t.    Dill
9×13        Pan

-Cut the bacon into pieces and place into a frying pan. Fry until desired crispiness has been achieved.
-Chop onion and red/green bell pepper into pieces. Place in frying pan with crisped bacon.
-In large mixing bowl, stir and evenly disperse eggs, milk, shredded cheese and hashbrowns.
-Now place contents of mixing bowl in 9×13 pan or baking dish.
-Bake for 35-45 minutes in the oven, or until desired golden crust is achieved.
