  • 2 Lbs Figs
  • 1 1/2 Cups Sugar
  • 1/2 Lemon
  • 1/4 Cup Water
  • 1 Cinnamon Stick
  • 2 Cloves


  1. If figs are hard, dice them. If they are soft, leave them whole. Take the stems off.
  2. Put all ingredients into a heavy bottom pot, cook on a low simmer. Stir frequently (to ensure there is no sticking).
  3. When the fruit starts to get soft and glisten, use a whisk or immersion blender and beat until it is a spreadable jam.
  4. Cook until it is about 220 degrees!
