- 2 Lbs Figs
- 1 1/2 Cups Sugar
- 1/2 Lemon
- 1/4 Cup Water
- 1 Cinnamon Stick
- 2 Cloves
- If figs are hard, dice them. If they are soft, leave them whole. Take the stems off.
- Put all ingredients into a heavy bottom pot, cook on a low simmer. Stir frequently (to ensure there is no sticking).
- When the fruit starts to get soft and glisten, use a whisk or immersion blender and beat until it is a spreadable jam.
- Cook until it is about 220 degrees!
