Cowboy Caviar Recipe

Cowboy Caviar: Simple, yet complex, and totally delicious.

Cowboy Caviar Ingredients:

2 15oz cans Black Beans, drained and rinsed

1 10oz bag frozen Corn, thawed

4-5 Roma Tomatoes, chopped and drained of their juice

2-3 Avocados, diced

5 Green Onions, sliced

1/2 Bunch Cilantro, minced

Salt and Pepper to taste

Cumin-Lime Vinaigrette

1 Tablespoon Dijon Mustard

2 Tablespoons Cumin Powder

Juice of 2 Fresh Limes

2 Tablespoons Red Wine Vinegar

1 Tablespoon Honey

1 Clove Garlic, minced

1/2 Cup Extra Virgin Olive Oil

Salt and Pepper to taste

 

Preparation

For the caviar, simply combine all the ingredients in a medium-sized serving bowl.

For the vinaigrette, combine all the ingredients except the olive oil in a bowl. Slowly whisk in the olive oil creating an emulsion and a nice thick consistency. Season with salt and pepper.

Next, gently fold the vinaigrette into the caviar mixture being careful not to break the avocado too much. Adjust seasoning and serve with your favorite tortilla chips.

Serves 6-8
