Chipotle Yams Recipe
Ingredients
- 4 Yams, peeled and cut into 1 inch cubes
- 4 Tablespoons olive oil
- 1 Medium yellow onion, chopped fine
- 3 Garlic cloves, minced
- 1-2 chipotle peppers (in adobo sauce)
- 1 Tablespoon adobo sauce
- 1 Stick unsalted butter, room temperature
- 1/4 Cup heavy cream
- Salt and pepper to taste
Preparation
Preheat oven to 400 degrees. In a medium sized bowl, toss the yams with 2 tablespoons of the olive oil and a pinch each of salt and pepper. Place the yams on a baking sheet and roast them for 45 minutes, giving them a stir every now and then. Meanwhile, prep all of the other ingredients. 20 minutes before the yams should be done, begin cooking the onion with the other 2 tablespoons of olive oil over medium-low heat in a medium sized saucepan stirring occasionally. After 10 minutes, add the garlic, chipotles, and adobo sauce. Cook for another 5 minutes stirring occasionally. When the yams are fork tender, transfer them to the onion and garlic mixture, add the butter and cream, and cook for another 5 minutes stirring occasionally. With a hand-held mixer, whisk the contents of the saucepan until smooth. Taste and season if necessary.
