Carrot Top Pesto

Now you have the pesto both worlds! Getting rid of leftovers and creating a delicious sauce!

Ingredients:

-1 Bunch Carrot Tops

-2 Bunches Basil

-2 Tsp Lemon Juice 

-1/4 Cup Pepitas

-1/2 Cup Olive Oil

-2 Clove Garlic 

-2 Tsp Salt

-1 Tsp Pepper 

Directions:

Toss all but oil in a food processor…blend well, scrape down sides & begin to drizzle oil in with machine on high. 

You can use any herbs you have laying around…I just happen to always have basil, as it’s my favorite. It also goes great with carrots!
