My Education, Experience, and Interests

Education: Javier attended Western Culinary Institute in 2002. With an intensive Le Cordon Bleu Culinary Arts program, he graduated with a degree in Occupational Studies.
Professional Experience: Born in Bilbao, Spain, Javier Canteras has spent the last eleven years cooking in Portland. Trained classically French, he has studied in the Mediterranean as well as under top Northwest chefs. After working as an Executive Chef and Restaurant Consultant for three now successful restaurants, he decided to get out of "the industry" and go back to his roots. The heart of his cooking stems from a passion for his family's old world cuisine, and the techniques and recipes handed down from his grandfather's restaurant in Andelucia, Spain, to his father, who began teaching him to cook at an early age. His style is Western Mediterranean inflected with the local, seasonal flavors of the Pacific Northwest.
Community Involvement: Javier enjoys providing the service of rock to the Northwest. He does this through his locally highly successful acclaimed band Smoochknob. Through rock, he has had the honor of raising money for charities such as the Diabetic Association of America.
Interests: Javier likes camping, snowboarding, traveling anywhere/anytime, films, music, dining out, and just going where life may take him.
