Picadilly Banana Bread


Ingredients

Picadilly Banana Bread
Ingredients
1 cup pecans
1 Tbs butter for pan
1 1/2 sticks unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar, lightly packed
2 large eggs
1 tsp vanilla extract
1 1/2 cups ripe banana
1 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp freshly grated nutmeg
1 1/2 cups unbleached flour
3 Tbs unprocessed sugar for topping

Directions

Prepare a 7 to 8-cup bread pan by coating with butter and lightly dusting with flour. Preheat oven to 325 degrees and toast pecans for about 8 minutes, watching carefully. Stir halfway through. Set aside to cool, then chop roughly.

Raise the oven temperature to 375 degrees. Cream the butter and sugars until light. Add eggs, vanilla and banana and mix. Sift together the rest of the ingredients and gently fold into the creamed mixture. Fold in the pecans. Pour into pan, sprinkle with unprocessed sugar and bake for about 50 minutes or until a toothpick inserted in the middle comes out clean. Cool for 5 minutes and then remove from the pan onto a cooling rack.

Resist the temptation to try the bread too soon – it tastes better the next day.
